Shiraz is the name given to the dark-skinned grape Syrah when grown in Australia and New World Wine regions. Syrah originated from Rhone Valley in Eastern France.

Fermentation & Winemaker Analysis

Cold gentle fermentation in closed fermenter to accentuate the fruity characteristics of the wine. Minimal amount of oak contact over 12 months designed to accentuate the fruitiness of the wine and lighten tannins.

Very soft, easy drinking Shiraz which compliments smoked chicken, spicy lamb dishes, tomato based pastas and traditional pizzas.

Originated from Boudreaux from a natural crossing of Cabernet Franc and Sauvignon Blanc

Pronounced spicy blackberry and fruit bouquet with aniseed undertones

Palate 

Blackcurrant and green pepper with mouth-filling chewy tannins, and a fruit-driven dry finish.

Spicy Lamb Sagwala Gosht and coconut rice

Limited 6-12 month contact with French oak, allowing for a more fruit-driven Cabernet.

Fermentation & Winemaker Analysis

Traditional hand-crafted winemaking processes which complement the natural complexities of the grape. 18 – 24 months in French oak gives the wine delightful spicy cedar and chocolate notes.

2012 was a dry year allowing for heavier tannins, leading to longer bottle aging to result in a complex superbly structured wine.

Drinking wonderfully now – able to cellar for an additional 5-10 years.

2012 Durif PvG-Durif 2012 sq

Origin 

Discovered in Rhone in 1880 by Dr Durif as a new grape varietal from natural crossing of Peloursin and Syrah grapes.

Crème caramel & forest mulberry with rose and tar notes

Palate

Medium to Full bodied mouth filling complexity of tannins with round dusty liquorice and chocolate notes and a lingering structured oak finish.

Food Pairing

Rabbit Ragu with fresh Pappardelle and grated parmesan

Fermentation & Winemaker Analysis

Careful skins management to ensure structured stability between fruit and tannin extraction. 18 to 24 months in small French and American oak barrels allows oak and fruit integration.

3 additional years of bottle aging to ensure tannins rounded out and integrate with the wine as to not to overpower or detach from the complex spice and fruit flavours.

This wine will compliment beef stew, rich tomato base meals and game meats. Able to cellar for an additional 5-10 years – but currently drinking exceptionally well
